Tome des Bauges

From time immemorial in the Massif des Bauges, cattle raisers have produced Tome. first for their own consumption, then for trade. The name is very special, it has only one “m,” and it comes from the Savoy dialect "Toma" which means cheese made at the alpine pastures.

Soon recognized as an “Appellation d’Origine Contrôlée,” Tome des Bauges is made exclusively from unpasteurized milk obtained in a limited area according to all the local traditions.
