Bleu de Gex
Thus qualified by the poet André Chénier, it is also known as Bleu du Haut Jura or Bleu de Septmoncel.Produced since the 13th century by the monks at the Abbey of Saint-Claude, in the Jura, its ancestor was supposedly the favourite cheese of Holy Roman Emperor Charles V.
Produced in the mountainous lands of the Haut Jura, above 800 m of elevation, this cow’s milk cheese is a marbled cheese that is regularly run through with long needles to distribute the mould evenly. Gourmets who do not like overly strong cheeses enjoy its exceptional taste.
